Here is a good hint when you’re cutting up your watermelon …use the parts closer to the rind to make these fruit popsicles and save the sweetest part to eat by itself. We’ll be adding a bit of sweetener to the pops so it’s okay if the watermelon is not too sweet.
Elle had fun making these and it was even funner to eat them (can you tell?). Popsicles are so easy to make I don’t know why I used to buy them from the store. Also, how you make popsicles is totally up to you since it’s really mashed up fruit on a stick. Put whatever frozen fruit or fresh fruit in a blender, put in a bit of sweetener and blend it all up – exactly like you would to make smoothies. It’s really hard to screw it up =)
Watermelon Mint Popsicles Recipe
- 3 cups seedless watermelon
- 1 tablespoon maple syrup or any sweetener
- 1/4 cup chopped mint
How To Make These Popsicles
- In a blender, blend watermelon and maple syrup until broken up and liquidy
- Add chopped mint and pulse the blender a couple times
- Spoon or pour into popsicle modes
- Freeze for 3-4 hours
