5  Easy 5 Ingredient Recipes

When it comes to feeding my children, I’m all for nourishing their little bodies with healthy and natural foods. But above all, whatever I feed them needs to be EASY to make! Who has time to spend hours in the kitchen making a garment meal while a 1.25-year-old is hanging off your leg and a 4-year-old is asking you to watch her sing “Let it go”? Not you either?

In the name of simplicity and for my sanity, I came up with a 1-day meal plan with these easy 5-ingredient recipes made with staples in our kitchen. And the best part? All these recipes takes less than 15 minutes to make and are nutritious!

Here is a little tip – you’ll notice I use a lot of “sprinkles” in these recipes. We do this a lot because kids love adding sprinkles to food and it adds more nutrients to our meal. My other theory is that when Elle has a part in making something, she’s more likely to eat it. Smart, right?

blueberry kale smoothie - easy 5 ingredient recipes

Breakfast: Blueberry Kale Smoothie

  • 1 cup blueberries
  • 1 banana
  • 1 cup milk or soy
  • 3 leaves of kale
  • 1 tablespoon blueberry jam (we used Smucker’s Pure Blueberry Jam)

Put all in a blender and blend until smooth.

Lunch: P&J Apple Sandwich

  • 1 apple
  • Peanut butter
  • Any variety of Smucker’s jam
  • Chia seeds
  • Coconut flakes
  1. Slice apple crosswise, about ¼” thick.
  2. Spread on peanut butter and jam.
  3. Sprinkle on chia seeds and coconut flakes.
  4. Close your sandwich.

With this sandwich idea, sometimes I’ll put the chia seeds and coconut flakes in bowls, then let Elle sprinkle them on. You could also use other things as “sprinkles” like hemp seeds, poppy seeds and sesame seeds. Also, sometimes I use thin rice crackers instead of apples for the “bread”.

Snack – Cream Cheese Cucumber Bites

  • 1/2 cucumber
  • Plain cream cheese
  • Any variety of Smucker’s jam
  • Coconut flakes
  • Chia Seeds
  1. Slice cucumbers 3/8” thick.
  2. Spread on cream cheese and jam.
  3. Sprinkle on coconut flakes and chia seeds.

Dinner – Lemon Peach Dip With Chicken Strips

  • Chicken strips
  • 1/2 cup peach jam (we used Smucker’s Pure Peach Jam)
  • ¼ cup lemon juice
  • 2 tablespoons chopped mint
  • Poppy seeds
  1. Cook your chicken strips.
  2. Melt jam in a sauce pan. Remove from heat.
  3. Stir in lemon juice and chop mint.
  4. Serve with chicken strips and use poppy seeds for sprinkles.

Dinner: Salad – Raspberry Mint Microgreens

  • 1/4 cup raspberry jam (we used Smucker’s Pure Raspberry Jam)
  • 1/4 cup rice wine vinegar or white wine vinegar
  • 3 tablespoons oil
  • 2 tablespoons chopped mint
  • Microgreens or any salad greens
  1. Whisk jam, vinegar, oil and chopped mint with a fork until blended.
  2. Toss with microgreens.

Ok, I know you’re wondering what microgreens are. They’re plants that are harvested when they are tiny plants like kale, Swiss chard, pea shoots, radish and arugula. Microgreens are super easy and fast to grow and they are super nutritious! I was told that these tiny little veggies have more nutrients than their mature counterparts!

Just for fun and to make it pretty, I sprinkled on some edible flowers we have growing in our garden. We used pansies and marigold. Did you know you can actually eat a lot of common flowers? Here is a list of edible flowers that are safe to eat and are easy for kids to grow.
